The Year of the Vegetable
In honor of the new kitchen, the new year, the new president, and the new economy, we are introducing a new Vegetable Based Initiative here at Casa Good Soil.

In the past, 93.7% of our vegetable consumption has consisted of steamed broccoli, Caesar salad, and baby carrots (which are really NOT baby, in case you didn't know). In the summer we also eat a lot of tomatoes, avocadoes and summer squash.

I'm guessing there has to be, like, ten more vegetables out there that aren't cauliflower or beets.

So, in looking toward the New World Order, we have resolved to increase our variety of vegetable intake before the rationing begins. Kidding, I'm kidding. Tonight I made a delicious butternut squash pasta (which really falls more in the starch category, but still) that I got from the most recent issue of Cook's Illustrated that graced my stocking this year. I also made a salad with butter bibb lettuce, grapefruit, pecans and avocadoes and made a grapefruit vinaigrette for it. Yum.

Got any good vegetable recipes that you'd like to share? No need to submit cauliflower or beet recipes. I've btdt, and I've got the t-shirt, thanks. And you cannot fool me into thinking that mashed cauliflower tastes Just Like Mashed Potatoes, Really It Does!

Other than that I'm open to anything. We are ready to experiment here. Hit me.

My family had this salad http://www.101cookbooks.com/archives/lime-peanut-coleslaw-recipe.html for the first time this week, and it was a big hit! I could not quit eating it!

We also eat a modified version of this recipe: http://www.elanaspantry.com/cooked-veggies/kale-with-cranberries/
I cook the kale in my electric skillet with some water in the bottom until it is soft (longer than the linked recipe). I add toasted almonds instead of the pine nuts and 3 t. of quality balsamic vinegar along with the olive oil. My 2 year old even likes this!

We've rediscovered the ease and great taste of steamed or sauteed spinach. I buy the bagged fresh spinach and either steam with about 1 tablespoon of water in a large stockpot with lid on until just tender, or sautee in a large skillet with 1 tablespoon of olive oil. Drizzle with fresh lemon juice when done and you can grate a bit of fresh parmesan on top.

Favorite new salad: baby greens, dried cranberries and blue cheese with poppy seed dressing. I don't normally like blue cheese but it's great in this combination.

We also eat a lot of zucchini, yellow squash and onions. Again, steamed is healthier but I tend to saute in olive oil. This is Terry's fallback veggie.
